<p>Lecture, four hours; laboratory, three hours. Critical analysis of nutrition prevention strategies using population-based, scientific, and clinical approaches to care of diverse populations. Consideration of nutrition in relation to prevention of disease and recovery from disease. Covers biological, chemical, public health, and clinical aspects of major macronutrients and micronutrients, digestion, energy assessment, obesity, malnutrition, dietary assessment, nutritional therapies, and exercise using candidate diseases approach. Examination of influence of overarching political, societal, and governmental systems within U.S. on observed nutritional patters. Exploration of food production in relation to climate change. Inequality of food choice and availability as well as consumption are linked to health disparities. Letter grading.</p>
